AUTHENTIC GREEK SALAD

I love a good green salad-but summer is the time when all vegetables are at their peak. Sweet juicy tomatoes, colorful bell pepper, and crisp cucumbers abound. This Greek salad recipe is flavorful and refreshing with just a few ingredients.

Authentic Greek salad

The Greek salad is a favorite of my father’s to make during the summer. I usually have plenty of tomatoes and cucumbers growing in the garden and I have some onions, olives, bell pepper, feta cheese, some herbs, some olive oil, and vinegar and I have delightful, cooling, fresh Greek salad.

An authentic Greek salad combination is delicious, just adding a handful of mint leaves for a fresh finish touch. My choice of olives their salty briny flavor is delectable alongside the feta and crisp veggies.

I use cherry tomatoes because they release less water into salad than larger tomatoes would. I also seed my cucumber to avoid making salad watery. A healthy salad will have a yummy jumble of veggies, olives, cheese in each and every bite.

Ingredients:

4 tablespoon extra virgin olive oil

2 tablespoon lemon juice

1 teaspoon red wine vinegar

salt and freshly ground black pepper

Cherry tomatoes, seeded and coarsely chopped

1/2 red onion chopped

1/2 cup black olive

1/2 cup crumbled feta cheese

1/2 teaspoon dried oregano

How do I make this dressing:

I whisked olive oil, lemon juice, vinegar, oregano, garlic combined together and until blended. I seasoned to taste with salt and freshly ground black pepper.

Combine salad ingredients:

I combined the tomatoes, cucumber, onion, bell pepper, olives in a bowl. I tossed with dressing, and sprinkle with feta cheese, and top with mints leaves and the authentic Greek salad is ready to serve.

The vibrant salad is so full of color and flavor. This healthy salad easily compliments any meal or it can stand alone as the main dish. The salad is packed full of nutrition and it must try any salad lover. I love how fresh the salad is simply said the dish is awesome.
